A vibrant, easy-to-make pasta salad combining colorful rotini, marinated vegetables, cheeses, and savory dressings—perfect for casual gatherings or quick lunches.

Ingredients

  • 1 bag rainbow rotini noodles
  • 1 jar marinated artichoke hearts, chopped
  • 1 small jar green olives, sliced
  • 1 large can pitted black olives, sliced
  • 1 small block Monterey Jack cheese, cubed
  • 1/2 pack sliced pepperoni or 1 lb. crawfish tails
  • fresh broccoli and cauliflower, cleaned and cut up (optional)
  • 1 small bottle Italian dressing
  • 1 small bottle creamy Parmesan or creamy Italian dressing
  • 1 small container shredded Parmesan cheese

Instructions

  1. Boil the rotini noodles until al dente, then drain.
  2. Rinse the noodles with cold water to stop cooking and prevent sticking.
  3. Slice and cube all ingredients, including artichoke hearts, olives, cheese, pepperoni or crawfish, and vegetables if using.
  4. In a large bowl, combine all sliced ingredients.
  5. Add both Italian and creamy Parmesan dressings, Cajun seasoning, and grated Parmesan cheese to the mixture.
  6. Mix everything thoroughly to coat all ingredients evenly.
  7. Add the cooked noodles and toss again to combine.
  8. Chill the pasta salad in the fridge for several hours before serving.
  9. Serve cold and enjoy!
