Ingredients

  • 6 Tbsp salted butter
  • 1/2 cup chopped onion
  • 1 lb chicken livers, cleaned and halved
  • 1/4 cup cognac
  • 2 to 4 Tbsp heavy cream
  • 1/4 lb sweet butter
  • 1 tsp sherry
  • 1 1/2 tsp salt
  • 1/4 tsp curry powder

Instructions

  1. In a large skillet, melt 3 tablespoons of salted butter; sauté the chopped onion over moderate heat for about 8 minutes, or until soft and transparent but not brown.
  2. Transfer the cooked onion to a food processor or Cuisinart.
  3. In the same skillet, melt the remaining 3 tablespoons of salted butter.
  4. Add the chicken livers; cook over quite high heat for 3 to 4 minutes, stirring and tossing almost constantly, until they are browned on the outside but still slightly pink inside.
  5. Pour the cognac over the chicken livers; ignite and let the flame burn out.
  6. Add the cooked chicken livers and cognac mixture to the food processor with the onions.
  7. Add the sweet butter, sherry, salt, and curry powder.
  8. Process until smooth and creamy, adding 2 to 4 tablespoons of heavy cream to achieve desired consistency.
  9. Taste and adjust seasoning if necessary, then chill before serving.
