Instructions

  1. Preheat oven to 425°F.
  2. Cut pork and veal into 1-inch cubes. Cut ham into 1/2-inch cubes. Set aside.
  3. In a skillet, melt butter over medium heat.
  4. Add shallots and cook until softened, about 3-4 minutes.
  5. Stir in thyme, crumbled bay leaf, allspice, ground cloves, grated nutmeg, cinnamon, and cayenne pepper; cook for 1 minute.
  6. Add the pork, veal, and ham to the skillet and cook until browned on all sides, about 5-7 minutes.
  7. Pour in dry white wine, season with salt and pepper, and simmer for 10 minutes.
  8. Chop toasted pistachios and stir into the meat mixture.
  9. Line a small baking dish with bacon slices, then transfer the meat mixture into the dish.
  10. Cover with foil and bake for 20 minutes.
  11. Let cool slightly before serving.
