- Mix salt, sugar, and peppers well.
- Lay ham on a piece of brown wrapping paper large enough to wrap the ham.
- Rub ham with small amounts of the mixture until it begins to melt.
- Lift ham; cover the paper under the ham with a thin coat of mixture.
- Lay the ham, skin side down, on the paper.
- Pack remaining mixture on the cut side and as much as possible under the skin and around the knee joint.
