Ingredients

  • 4 lb. clear, strained grease
  • 1 1/2 qt. water
  • 1 can lye
  • 1 large enamel pan
  • wooden spoon or paddle
  • glass jar
  • 2 c. coarse salt
  • 1 c. brown sugar
  • 2 Tbsp. black pepper
  • 1 Tbsp. red pepper
  • 1 ham

Instructions

  1. Mix salt, sugar, and peppers well.
  2. Lay ham on a piece of brown wrapping paper large enough to wrap the ham.
  3. Rub ham with small amounts of the mixture until it begins to melt.
  4. Lift ham; cover the paper under the ham with a thin coat of mixture.
  5. Lay the ham, skin side down, on the paper.
  6. Pack remaining mixture on the cut side and as much as possible under the skin and around the knee joint.
