- Peel and cook potatoes until almost tender; cool.
- Shred or grate potatoes into a large bowl.
- Melt 1/4 cup butter in a medium saucepan.
- Add cream of chicken soup and mix until blended.
- Add green onion, grated cheese, and sour cream.
- Mix until well combined.
- Add the mixture to the grated potatoes and mix well.
- Spread the potato mixture in a 9 x 13-inch baking pan.
- Melt 2 tablespoons butter and mix with cornflake crumbs.
- Sprinkle the crumb mixture over the top of the potatoes.
- Bake at 350°F for 30 to 40 minutes until golden and bubbly.
