Ingredients

  • 6 medium potatoes
  • 1/4 cup butter
  • 1 (10 oz.) can cream of chicken soup
  • 1/3 cup green onion
  • 1 1/2 cups grated cheese
  • 1 cup sour cream
  • 2 tablespoons butter

Instructions

  1. Peel and cook potatoes until almost tender; cool.
  2. Shred or grate potatoes into a large bowl.
  3. Melt 1/4 cup butter in a medium saucepan.
  4. Add cream of chicken soup and mix until blended.
  5. Add green onion, grated cheese, and sour cream.
  6. Mix until well combined.
  7. Add the mixture to the grated potatoes and mix well.
  8. Spread the potato mixture in a 9 x 13-inch baking pan.
  9. Melt 2 tablespoons butter and mix with cornflake crumbs.
  10. Sprinkle the crumb mixture over the top of the potatoes.
  11. Bake at 350°F for 30 to 40 minutes until golden and bubbly.
