Ingredients

  • 6 lb. chicken
  • 1 gal. water
  • 2 large onions
  • 2 c. okra
  • 4 c. tomatoes
  • 2 c. lima beans
  • 4 medium potatoes
  • 4 c. corn
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. sugar

Instructions

  1. Cut the chicken into 8 pieces and simmer for 2 1/4 hours in water.
  2. Remove the chicken from the broth.
  3. Add lima beans, tomatoes, onions, potatoes, and okra to the broth.
  4. Simmer until the lima beans are tender, about an hour.
  5. Add hot water if necessary and stir to prevent scorching.
  6. Add corn and boned, diced chicken along with salt, pepper, and sugar.
  7. Simmer until flavors meld and stew thickens, about 30 minutes before serving.
