Peach And Raspberry Crisp

Ingredients

  • 1 1/2 lb. peaches, peeled and sliced
  • 2 c. raspberries
  • 1 Tbsp. cornstarch
  • 1 Tbsp. lemon juice
  • 1/3 c. sugar
  • 2/3 c. flour
  • 3/4 c. brown sugar, packed
  • 1/2 c. rolled oats (old fashioned)
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3/4 stick cold butter
  • 3/4 c. pecans, chopped

Instructions

  1. Stir together the flour, brown sugar, oats, salt, cinnamon and nutmeg, then add butter and stir until mix looks like coarse meal (can be done in food processor), then stir in pecans.
  2. Toss fruit with the cornstarch, lemon juice and sugar.
  3. Spread fruit mix into a 7 x 11-inch pan or glass casserole dish.
  4. Sprinkle nut mix evenly over it and bake at 375° for 40 to 45 minutes or until golden.
