Peach Bread Pudding

- Preheat oven to 350°F.
- In a bowl, combine eggs, milk, and vanilla.
- Add the quartered bread slices and drained peaches to the mixture.
- In a small bowl, mix together sugar, ground cinnamon, and ginger or nutmeg.
- Reserve 1 1/2 teaspoons of the sugar-spice mixture and set aside.
- Add the remaining sugar mixture to the peach mixture and stir well.
- Pour the mixture into a greased baking dish.
- Sprinkle the reserved sugar-spice mixture on top.
- Bake for approximately 35 minutes or until set and golden brown.
- Serve warm, optionally topped with whipped cream.
