Ingredients

  • 4 to 5 peaches, peeled and halved
  • 1 (9-inch) pie shell, unbaked
  • 1 cup sugar
  • 1/3 cup butter or margarine, softened
  • 1/3 cup flour
  • 1 egg, slightly beaten
  • 1/4 teaspoon vanilla

Instructions

  1. Peel peaches and cut in half.
  2. Place in the bottom of an unbaked pie shell with cavity side down.
  3. Beat sugar and softened butter or margarine until well combined.
  4. Work flour into the mixture, then beat in the egg until blended.
  5. Add vanilla and stir to blend.
  6. Spread the mixture over the top of the peaches.
  7. Bake in a 375°F oven for 30 minutes.
  8. Puncture the crust that has formed on top of the pie.
  9. Lower the oven temperature to 300°F and bake for an additional 30 minutes until custard is slightly firm.
