Ingredients

  • 2 cups plain flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 (16 oz.) can peaches in syrup
  • 6 tablespoons melted butter
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 cup coarsely chopped pecans

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a medium bowl, combine flour, sugar, baking powder, and salt.
  3. Drain peaches in syrup and chop coarsely.
  4. In a separate bowl, mix melted butter, eggs, and lemon juice.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fold in the chopped peaches and chopped pecans.
  7. Pour batter into a greased loaf pan.
  8. Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before removing from the pan and slicing.
