- Drain the peaches, reserving the syrup.
- Combine 1/2 cup sugar, peach slices, cornstarch, corn syrup, pumpkin pie spice, and vanilla in a bowl.
- Set aside the cheesecake topping mixture.
- In a saucepan, combine eggs, 1/3 cup sugar, lemon juice, and 2 tablespoons of peach syrup. Cook, stirring constantly, until thick.
- Soften the cream cheese and blend in the sour cream.
