Ingredients

  • 13 oz. can sliced peaches
  • 1/2 cup sugar
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons corn syrup
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 tablespoon lemon juice
  • 3 oz. package cream cheese

Instructions

  1. Drain the peaches, reserving the syrup.
  2. Combine 1/2 cup sugar, peach slices, cornstarch, corn syrup, pumpkin pie spice, and vanilla in a bowl.
  3. Set aside the cheesecake topping mixture.
  4. In a saucepan, combine eggs, 1/3 cup sugar, lemon juice, and 2 tablespoons of peach syrup. Cook, stirring constantly, until thick.
  5. Soften the cream cheese and blend in the sour cream.
  6. Add the hot egg mixture to the cream cheese mixture and blend until smooth.
  7. Pour the filling into the prepared crust.
  8. Bake the pie until set and golden, then cool before serving.
