Peachy cornbread combines moist, tangy sour cream, sweet peaches, and savory cornbread for a comforting dish perfect for brunch or casual gatherings.

Ingredients

  • 2 cups sour cream
  • 1 large egg
  • 1/2 cup butter or margarine, softened
  • 2 (8 oz.) packages cornbread mix
  • 1 (1 lb.) can chunk-style peaches in heavy syrup, drained

Instructions

  1. Grease a 2-quart casserole dish.
  2. Put sour cream in a large bowl.
  3. Beat in the egg and stir in the softened butter or margarine.
  4. Add the cornbread mix and drained peaches.
  5. Mix lightly just until blended.
  6. Turn the mixture into the prepared casserole dish.
  7. Bake in a preheated oven at 400°F, then reduce the temperature to 350°F.
  8. Bake for 65 to 70 minutes until golden brown and puffed.
  9. Serve hot from the dish with a large spoon and eat with a fork.
