- Drain peaches, reserving 1/4 cup of juice.
- Chop peaches and reserve 1 cup of chopped peaches.
- In a blender, puree the remaining peaches with melted butter, eggs, and lemon juice.
- In a bowl, combine flour, sugar, baking powder, and salt; add the pureed peach mixture and mix well.
- Fold in the reserved chopped peaches and chopped pecans.
- Pour the batter into a greased 8 x 4 x 2-inch loaf pan.
- Bake in a preheated 350°F (175°C) oven for 60 minutes.
- Spread peach preserves on top of the bread and allow to cool in the pan for 10 minutes.
- Remove from pan and transfer to a wire rack to cool completely.
