Peachy Pecan Bread is a moist, flavorful loaf combining sweet canned peaches, crunchy pecans, and a hint of lemon, perfect for brunch, snacks, or dessert.

Ingredients

  • 16 oz. sliced canned peaches
  • 6 Tbsp. melted butter
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 2 c. flour
  • 3/4 c. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 3/4 c. chopped pecans
  • 2 Tbsp. peach preserves

Instructions

  1. Drain peaches, reserving 1/4 cup of juice.
  2. Chop peaches and reserve 1 cup of chopped peaches.
  3. In a blender, puree the remaining peaches with melted butter, eggs, and lemon juice.
  4. In a bowl, combine flour, sugar, baking powder, and salt; add the pureed peach mixture and mix well.
  5. Fold in the reserved chopped peaches and chopped pecans.
  6. Pour the batter into a greased 8 x 4 x 2-inch loaf pan.
  7. Bake in a preheated 350°F (175°C) oven for 60 minutes.
  8. Spread peach preserves on top of the bread and allow to cool in the pan for 10 minutes.
  9. Remove from pan and transfer to a wire rack to cool completely.
