Ingredients

  • 2 c. shortening
  • 2 1/4 qt. dark brown sugar
  • 3 c. peanut butter
  • 12 eggs
  • 3 lb. flour
  • 1 Tbsp. salt
  • 5 Tbsp. baking powder
  • 1 qt. milk
  • 1/4 c. vanilla

Instructions

  1. In a mixing bowl, thoroughly cream shortening, dark brown sugar, and peanut butter.
  2. Beat in eggs, one at a time, until blended well.
  3. In a separate bowl, sift together flour, salt, and baking powder.
  4. Mix milk and vanilla in another bowl.
  5. Alternate adding dry ingredients and milk mixture into the creamed mixture, blending well after each addition.
  6. Use a #24 scoop to portion batter into cupcake liners.
  7. Bake at 350°F for 20 to 25 minutes.
  8. Remove from oven, cool, and serve.
