Chewy and rich peanut butter oat bars combine sweet, nutty flavors with chocolate and butterscotch chips, perfect as an easy snack or dessert for all occasions.

Ingredients

  • 2/3 cup butter or margarine
  • 1/4 cup peanut butter
  • 1 cup packed brown sugar
  • 1/4 cup light corn syrup
  • 1/4 teaspoon vanilla
  • 4 cups quick-cooking oats
  • 1 cup milk chocolate chips
  • 1/2 cup butterscotch chips

Instructions

  1. In a mixing bowl, combine the butter, 1/4 cup peanut butter, brown sugar, corn syrup, and vanilla; gradually add the oats. Press into a 13 x 9 inch baking pan.
  2. Bake at 400°F for 12 to 14 minutes or until edges are golden brown.
  3. Cool on wire rack for 5 minutes.
  4. Meanwhile, melt the chocolate chips and 1/3 cup peanut butter in the microwave for 1 minute.
  5. Stir until blended and spread over warm bars.
  6. Cool completely and refrigerate for 2 to 3 hours before cutting.
