- Put sugar and water in a saucepan and boil until the sugar is dissolved and becomes dark and clear.
- Add butter and stir until melted.
- Boil the mixture for 15 minutes or until the syrup reaches the hard crack stage (325°F).
- Add toasted, unsalted peanuts to the syrup.
- Stir and then remove from heat.
- Spread the candy on buttered baking sheets or press into buttered patty pans.
- Cut or break into irregular pieces.
