Ingredients

  • 1/2 lb. bulk sausage
  • 1 clove garlic, minced
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 c. black-eyed peas, drained
  • 1 can tomato sauce

Instructions

  1. Brown the sausage in a skillet and drain well.
  2. Add the black-eyed peas to the skillet and mash them into the sausage mixture.
  3. Add minced garlic, oregano, basil, and tomato sauce to the skillet and stir well.
  4. Simmer uncovered for 30 minutes, stirring occasionally.
