Ingredients

  • 4 c. extra-sharp Cheddar cheese, shredded
  • 4 c. medium Cheddar cheese, shredded
  • 1 small onion, grated
  • 1 c. mayonnaise
  • 1 tsp. cayenne pepper
  • 1 c. chopped pecans

Instructions

  1. Place cheeses, onion, mayonnaise, and cayenne pepper in a large bowl. Stir until well combined.
  2. Place a 3-inch custard cup upside down in the middle of a 10-inch spring-form pan.
  3. Sprinkle half of the chopped pecans in the bottom of the pan.
  4. Spread the cheese mixture on top of the pecans.
  5. Cover with plastic wrap and chill the mixture until firm, at least 1 hour.
