Ingredients

  • 4 small salmon fillets
  • 1/2 cup flour
  • 2 eggs
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the flour in a shallow dish.
  3. Beat the eggs in a separate shallow bowl.
  4. Spread the chopped pecans in another shallow dish.
  5. Pat the salmon fillets dry and season with salt and pepper.
  6. Dredge each fillet in flour, shaking off excess.
  7. Dip the floured fillet into the beaten eggs, then coat with chopped pecans, pressing lightly to adhere.
  8. Arrange the coated fillets on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for about 10-12 minutes, or until the salmon flakes easily with a fork.
  10. Serve immediately, garnished with lemon wedges if desired.
