Ingredients

  • 1/2 cup butter, softened
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1 cup all-purpose flour
  • 1 beaten egg
  • 3/4 cup packed brown sugar
  • 1 tablespoon butter or margarine, softened
  • 1 teaspoon vanilla
  • dash of salt

Instructions

  1. In a small mixing bowl, stir together the beaten egg, brown sugar, softened butter or margarine, vanilla, and a dash of salt until smooth.
  2. Mix in chopped pecans or spoon about 1 teaspoon of pecans into each pastry-lined muffin cup.
  3. Fill each muffin cup with the egg mixture.
  4. Bake in a 325°F oven for about 25 minutes, or until the filling is set.
  5. Cool; remove from pans. Cover and chill to store.
