- In a small mixing bowl, stir together the beaten egg, brown sugar, softened butter or margarine, vanilla, and a dash of salt until smooth.
- Mix in chopped pecans or spoon about 1 teaspoon of pecans into each pastry-lined muffin cup.
- Fill each muffin cup with the egg mixture.
- Bake in a 325°F oven for about 25 minutes, or until the filling is set.
- Cool; remove from pans. Cover and chill to store.
