Ingredients

  • 1 cup chopped pecans
  • 1/2 cup Karo light or dark corn syrup
  • 2 tablespoons margarine or butter, softened
  • 2 cups Bisquick baking mix
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1 egg

Instructions

  1. Mix chopped pecans, corn syrup, and softened margarine or butter.
  2. Pour the mixture into an ungreased 9-inch round pan with 1 1/2-inch sides.
  3. Spread to cover the bottom of the pan.
  4. In a separate bowl, mix Bisquick baking mix, sugar, milk, vanilla, ground cinnamon, and the egg; beat for 30 seconds.
  5. Spread the batter over the pecan mixture in the pan.
  6. Bake at 350°F until golden brown and a wooden toothpick inserted in the center comes out clean, about 30 minutes.
  7. Run a knife around the edge of the pan to loosen the cake.
  8. Immediately place the pan on a heatproof plate to cool slightly before serving.
