Pecan Wild Rice
Ingredients
- 1 1/3 cups chicken broth ⓘ
- 2 teaspoons butter ⓘ
- 1/4 teaspoon salt ⓘ
- 1 (2.75-oz.) package quick-cooking wild rice ⓘ
- 4 green onions, thinly sliced ⓘ
- 1/2 cup golden raisins ⓘ
- 1/3 cup chopped pecans, toasted ⓘ
- 1 teaspoon grated orange rind ⓘ
- 1/3 cup fresh orange juice ⓘ
- 1/4 cup chopped fresh parsley ⓘ
- 1 tablespoon olive oil
- 1/4 teaspoon salt ⓘ
Instructions
- Bring first 3 ingredients to a boil in a medium saucepan. Add rice; cover, reduce heat, and simmer 5 minutes or until rice is tender. Drain off excess liquid. Fluff with a fork. Add green onions and remaining ingredients; toss gently to combine.
