Pecan Wild Rice

Ingredients

  • 1 1/3 cups chicken broth
  • 2 teaspoons butter
  • 1/4 teaspoon salt
  • 1 (2.75-oz.) package quick-cooking wild rice
  • 4 green onions, thinly sliced
  • 1/2 cup golden raisins
  • 1/3 cup chopped pecans, toasted
  • 1 teaspoon grated orange rind
  • 1/3 cup fresh orange juice
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

Instructions

  1. Bring first 3 ingredients to a boil in a medium saucepan. Add rice; cover, reduce heat, and simmer 5 minutes or until rice is tender. Drain off excess liquid. Fluff with a fork. Add green onions and remaining ingredients; toss gently to combine.
