Ingredients

  • 4 to 5 lb boneless beef pot roast
  • 1 envelope beef flavor mushroom mix
  • 1 (7 3/4 oz) jar junior apricots with tapioca
  • 1/4 tsp salt
  • 2 medium onions, sliced
  • 1 Tbsp lemon juice
  • 2 Tbsp snipped parsley
  • water
  • flour

Instructions

  1. Place the pot roast on a rack in a Dutch oven or roasting pan.
  2. Combine the mushroom mix, apricots, and salt, then spread over the roast.
  3. Cover tightly and cook in a slow oven at 325°F (163°C) for 2 hours.
