Ingredients

  • 4 chicken breast halves, skinned, boned and cut in strips
  • 2 Tbsp. olive oil
  • 1 c. water
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/4 tsp. ground ginger
  • 1 sweet red bell pepper, cut into 1/4-inch strips
  • 1 green bell pepper, cut into 1/4-inch strips
  • 1 Tbsp. cornstarch
  • 1 Tbsp. molasses
  • hot cooked rice
  • 2 green onions, sliced
  • 2 Tbsp. soy sauce

Instructions

  1. Saute chicken in hot oil in a heavy skillet for 2 to 3 minutes until lightly browned.
  2. Add water, minced garlic, ground ginger, and sliced onion; bring to a boil.
  3. Cover the skillet, reduce heat, and simmer for 8 minutes.
  4. Stir in bell pepper strips, cornstarch mixed with molasses, and soy sauce; cook until peppers are tender and sauce has thickened.
  5. Serve hot over cooked rice and garnish with sliced green onions.
