Ingredients

  • 2 hot peppers
  • dash of salt
  • 2 c. white cornmeal
  • 2 tsp. flour
  • 2 tsp. baking powder
  • pinch of baking soda
  • 2 Tbsp. bacon drippings

Instructions

  1. Mix salt, cornmeal, flour, baking powder, and baking soda in a bowl.
  2. Add milk and bacon drippings; melted shortening can be used if no drippings are available.
  3. Add peppers, cut very small.
  4. Pour into a warm baking pan and bake in a 325°F oven for 30 minutes or until done.
  5. Alternatively, spoon the mixture into a skillet and cook on the stove in patties.
