Ingredients

  • 1 pkg. spinach
  • 1 tomato
  • 1 red onion
  • 1 lb. bacon
  • 1 pkg. croutons
  • 2 to 3 Tbsp. white vinegar
  • salt
  • pepper
  • 1 avocado

Instructions

  1. Cook the bacon until crispy and reserve the drippings.
  2. Wash the spinach and tear into bite-sized pieces.
  3. In a large bowl, combine the spinach, thinly sliced red onion, chopped avocado, chopped tomato, and crumbled bacon.
  4. In a small bowl, mix white vinegar, sugar, salt, and pepper to make the vinaigrette.
  5. Pour the vinaigrette over the salad and toss gently.
  6. Add croutons just before serving.
