Ingredients

  • 3/4 cup crushed vanilla wafers
  • 2/3 cup margarine
  • 1 cup chopped pecans
  • 2 squares unsweetened chocolate
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 gallon peppermint ice cream

Instructions

  1. Place crushed vanilla wafers in a 9 x 13-inch pan and spread evenly.
  2. Melt unsweetened chocolate with margarine in a saucepan.
  3. Add powdered sugar, egg yolks, chopped pecans, and vanilla to the melted chocolate mixture, stirring until combined.
  4. Fold in stiffly beaten egg whites into the chocolate mixture gently.
  5. Spread the chocolate mixture over the wafer crumbs in the pan.
  6. Spread softened peppermint ice cream evenly on top of the chocolate layer.
  7. Freeze the assembled dessert until firm before serving.
