Ingredients

  • 2 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. water
  • 1 pt. oysters
  • 1 qt. scalded milk
  • 1/4 c. butter or margarine

Instructions

  1. Combine the flour, salt, pepper, and water in a bowl.
  2. Blend together to make a smooth paste.
  3. Stir the paste into the oysters with their liquid in a saucepan over low heat.
  4. Simmer oysters over low heat until edges curl.
  5. Pour in the scalded milk and stir well.
  6. Remove from heat and cover the saucepan.
  7. Let stand for 10 to 15 minutes to improve flavor.
  8. Add the butter or margarine and reheat briefly.
  9. Rinse soup tureen and/or soup plates with hot water to keep the soup piping hot.
  10. Serve with oyster crackers.
