Ingredients

  • 3 egg whites
  • 1/2 tsp vanilla extract
  • 1/4 tsp cream of tartar
  • 6 Tbsp sugar

Instructions

  1. In a deep bowl, beat egg whites with vanilla extract and cream of tartar until soft peaks form.
  2. Do not overbeat egg whites before adding sugar, or the meringue will leak, making the top of the pie moist and slippery.
  3. Gradually add sugar, beating until stiff, glossy peaks form, and the sugar dissolves.
  4. Rub some meringue between your fingers; you shouldn't feel any sugar granules.
  5. Spread the meringue over hot filling on the pie.
  6. To prevent meringue from shrinking while baking, seal it to the edges of the pastry.
  7. Bake in a 350°F oven for 12 to 15 minutes or until the meringue is golden.
