Perking Roast Beef

- Cut slit in roast, completely through meat.
- Put garlic and onions in slits.
- Put roast in big bowl and pour vinegar over it. Make sure vinegar runs into slits.
- Cover and place in refrigerator for 24 to 48 hours.
- Before cooking, pour off vinegar.
- Place meat in iron pot and brown on both sides.
- Pour coffee and water over roast.
- Cover and cook slowly for about 6 hours on stove.
- May have to add more water.
- About 20 minutes before serving, add salt and pepper.
