Ingredients

  • 1 cup flour
  • 1 cup oil
  • 3 cups chopped onions
  • 2 cups chopped celery
  • 1 cup chopped bell pepper
  • 2 small cans beef broth
  • 1 quart tomatoes
  • 2 quarts water
  • 2 pounds venison, cut bite size
  • 2 pinches Accent
  • 2 pinches meat tenderizer
  • 2 pinches Season-All
  • 2 pinches salt

Instructions

  1. To form the roux, mix flour and oil; cook on low heat until dark brown.
  2. Boil venison until tender.
  3. Sauté onions, bell pepper, and celery in butter until tender.
  4. Combine the roux, venison, vegetables, spices, tomatoes, water, and beef broth in a large pot.
  5. Bring to a boil, then simmer for 1 hour, stirring regularly.
  6. Add Cajun seasoning to taste.
  7. Serve over rice.
