Ingredients

  • 1 quart persimmons
  • 2 cups hot milk
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1/2 cup butter
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

Instructions

  1. Put persimmons in a colander and set in a bowl.
  2. Pour hot milk over them and work the pulp through the colander.
  3. Add raisins, dates, coconut, and nuts if desired to the persimmon pulp.
  4. Combine sugar, eggs, salt, melted butter, flour, baking powder, and baking soda to the pulp mixture and mix well.
  5. Pour the batter into a greased baking pan.
  6. Bake until a fork inserted in the center comes out clean and the top is nicely browned, approximately 45 minutes.
