Persimmon Spoon Pudding

Ingredients

  • 2 c. persimmon pulp
  • 1 1/2 c. sugar
  • 2 eggs
  • 2 c. flour
  • 1/2 tsp. soda
  • pinch of salt
  • 2 Tbsp. butter
  • 1 qt. sweet milk

Instructions

  1. Mix beaten eggs with persimmon pulp. Add sugar.
  2. Sift together flour, soda, and salt. Add alternately to the mixture with sweet milk.
  3. Stir in 2 tablespoons melted butter. The mixture will be quite thin.
  4. Pour into a large ovenproof bowl or casserole.
  5. Bake at 350°F for 45 minutes to 1 hour, stirring every 15 minutes, until dark, grainy, but not dry.
