Ingredients

  • 2 (8 oz.) cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 18 vanilla wafers
  • 1 (21 oz.) can cherry pie filling

Instructions

  1. Beat cream cheese, sugar, eggs, lemon juice, and vanilla together until light and fluffy.
  2. Line muffin pans with foil cupcake papers and place a vanilla wafer in each.
  3. Fill each cup two-thirds full with the cream cheese mixture.
  4. Bake at 375°F (190°C) for 15 to 20 minutes or until set and slightly brown.
  5. Top each cheesecake with a tablespoon of cherry pie filling.
  6. Chill before serving.
