A moist, flavorful holiday fruit cake packed with chopped nuts, dried fruits, and fresh bananas, perfect for festive gatherings and enjoyed with butter or whipped cream.

Ingredients

  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 1/2 cups oil
  • 3 eggs
  • 1 1/2 teaspoons vanilla
  • 3/4 cup pecans, chopped
  • 3/4 cup raisins
  • 1 (8 oz.) can crushed pineapple in heavy syrup
  • 1 (8 oz.) jar maraschino cherries, halved
  • 3 bananas, diced
  • 3/4 cup coconut
  • 2 apples, peeled and diced

Instructions

  1. Sift flour, cinnamon, soda, and salt together into a large bowl.
  2. Stir sugar into the mixture with a large spoon.
  3. Stir in oil, eggs, vanilla, and pineapple with a spoon (do not use an electric mixer).
  4. Add chopped pecans, raisins, halved maraschino cherries, diced bananas, coconut, and peeled diced apples.
  5. Mix all ingredients well.
  6. Use floured and greased Bundt pan(s).
  7. Pour the batter into one large Bundt pan or two small (6 cup capacity) Bundt pans.
  8. Bake at 350°F (175°C) for approximately 50 to 60 minutes.
  9. Check doneness with a sharp knife; cake may crack on top when done.
  10. Serve warm with butter or whipped cream. Cream cheese frosting is optional.
