Ingredients

  • 3 to 3 1/2 lb. beef chuck pot roast
  • 1 Tbsp. vegetable oil
  • 2 medium onions
  • 1 (8 oz.) can tomato sauce
  • 1 c. Pace picante sauce
  • 1 1/4 tsp. ground cumin
  • 1/2 tsp. oregano leaves
  • 2 garlic cloves
  • 1 green pepper

Instructions

  1. In a large skillet over medium heat, brown the beef chuck pot roast in vegetable oil.
  2. Drain excess fat and sprinkle the onions over the meat.
  3. Combine tomato sauce, picante sauce, ground cumin, crushed oregano leaves, and minced garlic in a bowl.
  4. Pour the sauce mixture over the meat and onions.
  5. Reduce heat to low, cover, and simmer gently for about 2 to 2 1/2 hours, adding chopped green pepper during the last 15 minutes of cooking.
  6. Begin checking the meat for tenderness after 1 hour and 45 minutes of cooking.
  7. Remove the meat to a serving platter and keep warm.
