Ingredients

  • 1 lb. navy beans
  • 1 1/2 tsp. salt
  • 1/2 c. finely chopped onion
  • 2 cloves crushed garlic
  • 1/3 to 1/2 c. chopped parsley
  • 1/3 c. oil
  • 1/2 c. cider vinegar
  • 1 tsp. salt

Instructions

  1. Soak the navy beans overnight.
  2. Drain the soaked beans and cover with fresh water.
  3. Add 1 1/2 teaspoons salt to the beans.
  4. Cook the beans at a simmer for 1 to 1 1/2 hours or until tender.
  5. Drain the cooked beans and rinse well.
  6. Combine chopped onion, crushed garlic, chopped parsley, oil, cider vinegar, and salt.
  7. Pour the mixture over the drained beans.
  8. Chill the beans for several hours before serving.
  9. Keep refrigerated; the beans improve in flavor over time.
