- Prepare the dough by combining flour and eggs until a smooth, elastic mixture forms.
- Roll out the dough on a floured surface to about 1/8 inch thickness.
- Use a 3 or 4-inch round cookie cutter to cut out circles from the dough.
- In a bowl, mash peeled potatoes until smooth and mix with grated sharp Cheddar cheese and chopped chives if using.
- Season the potato-cheese mixture with pepper to taste.
- Place a spoonful of the filling onto each dough circle.
- Fold the dough over to form a half-moon shape and pinch the edges to seal.
- Bring a large pot of salted water to a boil.
- Cook the pierogies in boiling water until they float to the surface, about 3-4 minutes.
- Remove with a slotted spoon and serve hot, optionally sautéed in butter.
