Ingredients

  • 4 c. all-purpose flour
  • 8 eggs
  • 8 potatoes, peeled and cut up in chunks
  • 1 1/2 lb. sharp Cheddar cheese, grated
  • pepper to taste
  • 1 small bunch chives, chopped (optional)

Instructions

  1. Prepare the dough by combining flour and eggs until a smooth, elastic mixture forms.
  2. Roll out the dough on a floured surface to about 1/8 inch thickness.
  3. Use a 3 or 4-inch round cookie cutter to cut out circles from the dough.
  4. In a bowl, mash peeled potatoes until smooth and mix with grated sharp Cheddar cheese and chopped chives if using.
  5. Season the potato-cheese mixture with pepper to taste.
  6. Place a spoonful of the filling onto each dough circle.
  7. Fold the dough over to form a half-moon shape and pinch the edges to seal.
  8. Bring a large pot of salted water to a boil.
  9. Cook the pierogies in boiling water until they float to the surface, about 3-4 minutes.
  10. Remove with a slotted spoon and serve hot, optionally sautéed in butter.
