Ingredients

  • 8 oz cole slaw mix
  • 1/2 cup slivered almonds
  • 1/2 cup pine nuts
  • 4 green onions, finely chopped
  • 1 package chicken Ramen noodles
  • seasoning from Ramen noodles
  • 1/3 cup oil
  • 5 tablespoons white vinegar

Instructions

  1. Toast the almonds and pine nuts until golden brown, then let cool.
  2. In a large bowl, combine the toasted nuts, cole slaw mix, and chopped green onions.
  3. Crush the Ramen noodles into small pieces and add to the salad mixture.
  4. In a small bowl, whisk together the oil, white vinegar, and the seasoning from the Ramen noodles.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately.
