Ingredients

  • 4 cups flour
  • 4 teaspoons baking powder
  • 3/4 cup sugar
  • 3/4 cup softened margarine
  • 1 cup sour cream
  • 2 eggs
  • 1 teaspoon vanilla
  • pinch of salt
  • 18 ounces jar apricot jam

Instructions

  1. Mix together flour, baking powder, and sugar.
  2. Cut in margarine until mixture resembles coarse crumbs.
  3. In a separate bowl, combine sour cream, eggs, vanilla, and salt.
  4. Add the sour cream mixture to the flour mixture and mix well.
  5. Knead the dough until well combined.
  6. Divide dough into thirds; press 2/3 into a greased 18 x 12 x 1-inch pan, bringing dough up around the sides.
  7. Spread apricot jam evenly over the dough in the pan.
  8. Roll remaining dough into a rectangle and cut into 1/2 inch strips.
  9. Arrange strips into a lattice pattern over the jam filling.
  10. Place strips of dough around the sides of the pan to create a border.
  11. Bake at 350°F (175°C) for 45 to 55 minutes, until lightly browned.
  12. Cool the squares and sprinkle with powdered sugar before serving.
