Ingredients

  • 1 large pineapple
  • 1 banana
  • 1/4 cup mayonnaise
  • 1 1/4 cups cooked chicken
  • 1/4 cup diced celery
  • 1/2 cup coconut

Instructions

  1. Cut the pineapple lengthwise into halves.
  2. Scoop out the pineapple flesh from the halves, leaving a shell for serving.
  3. Mix the pineapple pieces with cooked chicken, sliced banana, mayonnaise, diced celery, and coconut in a bowl.
  4. Return the mixture to the pineapple halves just before serving.
