Ingredients

  • 1 (2 or 3 lb.) chicken
  • 6 potatoes
  • 6 carrots
  • 1 small onion
  • salt to taste
  • pepper to taste
  • 1/2 tsp. Italian seasoning
  • 1 Tbsp. oil
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 can condensed onion soup

Instructions

  1. In a roasting pan, heat oil and butter.
  2. Add flour and stir until light brown.
  3. Slowly add liquid while stirring to make gravy.
  4. Slice potatoes, carrots, and onion thinly.
  5. Mix sliced vegetables with salt, pepper, Italian seasoning, and condensed onion soup.
  6. Place the vegetable mixture in the gravy and top with cut-up chicken.
  7. Cook in the oven at 350°F for about 1 hour.
