Pineapple Cheat Cake

- Drain the pineapple and reserve one cup of juice, adding water if necessary to make one cup.
- In a saucepan, mix the gelatin, skim milk, and pineapple juice.
- Cook over low heat, stirring constantly, until the gelatin is dissolved.
- In a large bowl, beat the cream cheese until smooth and fluffy.
- Gradually beat in the hot gelatin mixture, vanilla, and lemon juice.
- Chill the mixture until it holds a kiss shape when dropped from a spoon.
- Beat the egg whites until stiff peaks form. Add the Equal sweetener.
- Fold the drained pineapple and whipped egg whites into the cheese mixture.
- Pour the filling into a 9-inch pie plate or spring-form pan and chill until firm, about 3 to 4 hours.
