Pineapple Cheat Cake

Ingredients

  • 20 oz. can crushed pineapple in natural juice
  • 1 envelope Knox gelatine
  • 1/2 cup skim milk
  • 8 oz. Neufchatel cream cheese
  • 1 teaspoon vanilla
  • 1/4 teaspoon lemon juice
  • 2 egg whites
  • 4 packets Equal

Instructions

  1. Drain the pineapple and reserve one cup of juice, adding water if necessary to make one cup.
  2. In a saucepan, mix the gelatin, skim milk, and pineapple juice.
  3. Cook over low heat, stirring constantly, until the gelatin is dissolved.
  4. In a large bowl, beat the cream cheese until smooth and fluffy.
  5. Gradually beat in the hot gelatin mixture, vanilla, and lemon juice.
  6. Chill the mixture until it holds a kiss shape when dropped from a spoon.
  7. Beat the egg whites until stiff peaks form. Add the Equal sweetener.
  8. Fold the drained pineapple and whipped egg whites into the cheese mixture.
  9. Pour the filling into a 9-inch pie plate or spring-form pan and chill until firm, about 3 to 4 hours.
