Pineapple Cheese Mousse

A light, creamy mousse blending sweet pineapple and sharp cheddar cheese, perfect as a refreshing appetizer or unique dessert for gatherings and special occasions.

Ingredients

  • 2 envelopes unflavored gelatin
  • 1 can crushed pineapple
  • 3 Tbsp lemon juice
  • 1/3 cup sugar
  • pinch of salt
  • 1/3 lb Cheddar cheese, shredded
  • 1 cup heavy whipped cream
  • 1/2 cup cold water

Instructions

  1. Soften the unflavored gelatin in 1/2 cup of cold water.
  2. Put the gelatin mixture on medium heat and cook until dissolved.
  3. Add the crushed pineapple and stir to dissolve the gelatin completely. Remove from heat.
  4. Add lemon juice, sugar, and a pinch of salt to the mixture.
  5. Chill until the mixture becomes syrupy.
  6. Fold in shredded Cheddar cheese and heavy whipped cream until well combined.
  7. Pour the mixture into a mold.
  8. Chill until the mousse is firm.
