Instructions
- Heat oven to 375°F (190°C).
- Butter 6 (5-ounce) custard cups.
- Measure and set aside 1 tablespoon of the graham cracker crumbs.
- Combine remaining crumbs with butter and 1 tablespoon sugar.
- Press about 2 tablespoons of this mixture firmly against the bottom and sides of each custard cup with a spoon.
- Beat cream cheese until fluffy.
- Beat in egg yolk, 5 tablespoons sugar, 1/4 teaspoon vanilla, and nutmeg.
- Stir in well-drained crushed pineapple.
- Beat egg white until stiff and fold into pineapple mixture.
- Spoon equal amounts of the mixture into each prepared cup.
- Set cups on a shallow pan and bake for 20 minutes.
