Ingredients

  • 3/4 cup fine graham wafer crumbs
  • 1 tablespoon sugar
  • 1 egg yolk
  • 1/4 teaspoon vanilla
  • 1 cup crushed pineapple well drained
  • 1/2 cup sour cream
  • 1/4 teaspoon vanilla
  • 3 tablespoons soft butter
  • 8 ounces cream cheese room temperature
  • 5 teaspoons sugar

Instructions

  1. Heat oven to 375°F (190°C).
  2. Butter 6 (5-ounce) custard cups.
  3. Measure and set aside 1 tablespoon of the graham cracker crumbs.
  4. Combine remaining crumbs with butter and 1 tablespoon sugar.
  5. Press about 2 tablespoons of this mixture firmly against the bottom and sides of each custard cup with a spoon.
  6. Beat cream cheese until fluffy.
  7. Beat in egg yolk, 5 tablespoons sugar, 1/4 teaspoon vanilla, and nutmeg.
  8. Stir in well-drained crushed pineapple.
  9. Beat egg white until stiff and fold into pineapple mixture.
  10. Spoon equal amounts of the mixture into each prepared cup.
  11. Set cups on a shallow pan and bake for 20 minutes.
