Ingredients

  • 1/2 cup butter or margarine
  • 1 cup firmly packed brown sugar
  • 1/2 cup pecans or walnut halves
  • 1 cup fresh cranberries
  • 1 (15 1/4 oz.) can chunk pineapple, drained
  • Juice from pineapple can

Instructions

  1. Preheat oven to 350°F (175°C). Melt butter in a 13 x 9-inch baking dish in the oven.
  2. Sprinkle the melted butter with brown sugar, pecans or walnuts, cranberries, and drained pineapple.
  3. Mix the reserved pineapple juice with water to match the liquid amount specified on the cake mix package.
  4. Prepare the yellow cake mix according to package instructions, using the prepared pineapple juice mixture instead of water.
  5. Pour the prepared cake batter evenly over the fruit in the baking dish.
  6. Bake at 350°F (175°C) for 35 to 40 minutes or until the cake tests done.
  7. Cool the cake for 5 minutes, then invert onto a large serving dish.
  8. Serve warm or at room temperature, optionally with whipped topping.
