Ingredients

  • 1 envelope Knox gelatine
  • 1/4 cup cold water
  • 1 cup crushed pineapple, drained
  • 1/3 cup sugar
  • 1/2 pint whipping cream
  • 4 eggs
  • few grains salt
  • 1 tablespoon lemon juice

Instructions

  1. Soak the Knox gelatine in cold water for 5 minutes.
  2. Beat egg yolks with 1/4 cup sugar until well combined.
  3. Add crushed pineapple, lemon juice, and a few grains of salt to the egg yolk mixture.
  4. Cook over low heat until the mixture thickens to the consistency of custard.
  5. Remove from heat, add softened gelatine, stir until dissolved, and allow to cool.
  6. Beat egg whites until white and foamy.
  7. Gradually add remaining sugar and continue beating until the mixture is glossy and holds soft peaks.
  8. When the egg white mixture begins to thicken, fold it into the cooled pineapple custard.
  9. Beat whipping cream until stiff peaks form and fold into the mixture.
  10. Pour the filling into a baked pie crust and refrigerate until set.
