Apricot Foldovers
Apricot foldovers are delicate, flaky pastries filled with sweet apricot preserves and topped with chopped nuts. - Add cut-up margarine to flour and mix with fingers.
- Make a well in the flour mixture; add egg yolks and sugar that have been mixed together.
- Mix with fingers; sprinkle with 2 tablespoons cold water and continue to work with fingers.
- Form into a ball, wrap in wax paper, and refrigerate until chilled.
- Preheat oven to 325°F (160°C).
- Take dough out and divide into 2 balls; refrigerate one.
- Roll part of the dough to about 1/8-inch thickness on a lightly floured surface.
- Cut into 2 1/2-inch rounds.
- Place rounds on a lightly greased cookie sheet.
- Put 1/2 teaspoon of apricot preserves in the center of each round and pinch around the edge or use a fork to seal.
- Brush the tops with a mixture of 1 beaten egg and 1 tablespoon milk.
- Sprinkle with finely chopped nuts.
- Bake for 18 to 20 minutes or until lightly brown, then remove from oven and cool.
