Ingredients

  • 6 oz. medium egg noodles
  • 1 cup whipping cream
  • 4 eggs
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2/3 cup raisins
  • 1 (15 oz.) can crushed pineapple
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, stir together cooked noodles, whipping cream, egg yolks, sugar, salt, cinnamon, and nutmeg.
  3. Stir in raisins, drained crushed pineapple, and vanilla extract.
  4. In a medium bowl, beat egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the noodle mixture.
  6. Pour the mixture into a greased 7 x 11-inch glass baking dish.
  7. Bake for 35 to 40 minutes or until the top is light brown.
  8. Cover and refrigerate until ready to serve, then reheat before serving.
