Ingredients

  • 3 oz. lemon Jell-O
  • 1 large can crushed pineapple
  • 4 oz. pimento, chopped
  • 6 oz. cream cheese
  • 1/2 cup chopped celery
  • 2/3 cup chopped pecans
  • 1 small Cool Whip

Instructions

  1. Drain the crushed pineapple and reserve the juice.
  2. Heat the reserved pineapple juice until warm.
  3. Add the dry lemon Jell-O to the warm juice and remove from heat, stirring until dissolved.
  4. Add the cream cheese and crushed pineapple to the Jell-O mixture and stir until smooth.
  5. Fold in the chopped pimento, chopped celery, and chopped pecans.
  6. Gently fold in the small container of Cool Whip until well combined.
  7. Pour the mixture into a mold or serving dish and chill until set.
